Chicken Fajita Casserole

This Chicken Fajita Casserole isn’t a traditional casserole, but it sure does pack a lot of flavor!

This makes about 4 servings.

Notes: You could just use a packet of fajita seasoning if you have that on hand, instead of all the different spices listed.

Not your traditional “casserole” but this Chicken Fajita casserole is so yummy, your family is sure to love it!

Ingredients

  • 3 or 4 small chicken breasts (1 1/2 lbs) skinless, boneless – or 2 large chicken breasts, split lengthwise

  • 2 bell peppers, red and green, seeded and cut into strips

  • 1 medium onion, minced

  • 1 tsp cumin powder

  • 1 1/2 tsp chili powder

  • 1 tsp garlic powder, or minced garlic

  • 2 tsp paprika

  • Salt and fresh cracked pepper to taste

  • 1 Tbsp vegetable oil

  • 1 cup shredded Mozzarella (or your favorite cheese, Pepperjack, Monterrey Jack, Cheddar…)

  • Fresh chopped cilantro, or parsley, for garnish
