Chicken Parmesan Soup

 
 

Need a quick but delicious soup for dinner? THIS IS IT. The flavor is amazing and we will be making this again soon.

This recipe makes about 6-8 servings.

Notes for this recipe - I used rotisserie chicken.

This soup is packed with flavor and takes 20 minutes to make!

Ingredients

  • 1 tbsp. extra virgin olive oil

  • 1 large onion, chopped

  • 3 minced cloves of garlic

  • 3 tbsp tomato paste

  • 1 tsp crushed red pepper

  • 1 15oz can diced tomatos

  • 6 cups chicken broth

  • 1/2 bag of cheese tortellini

  • 2 chicken breasts cooked and shredded or cubed.. or use a rotisserie chicken :)

  • 1 1/2 cup mozzarella cheese

  • 1 cup parmesan cheese

  • 1 tbsp parsley

  • salt and pepper to your liking

Here’s how to make it

  • In a large pot over medium heat, heat oil. Add onion and cook, stirring until soft (about 5 minutes).

  • Add garlic and cook for about 1 minute. Stir in tomato paste and red pepper flakes. Add tomatoes and broth. Bring to a simmer.

  • Add tortellini let boil for 5-6 minutes.

  • Add chicken, mozzarella, parmesan and parsley. Let cheese melt, Season with salt and pepper to your liking.

    *We like to have breadsticks with ours :)
