  • Salt and pepper

  • 2 Tbs butter

  • 1 onion (diced)

  • 4 garlic cloves (minced)

  • 12 oz roasted red peppers (finely diced)

  • 1 1/2 cups chicken stock (divided)

  • 4 oz cream cheese

  • 2 cups fresh baby spinach leaves

  • 2 cups freshly cooked pasta
