Crockpot Honey Lime Chicken Sandwiches

This makes about 6-8 servings.

Notes: We made a spicy mayo by mixing Duke’s mayo with Sriracha sauce! Put that on your toasted buns and you’ll LOVE the flavor it adds to the sandwich! Also, for the slaw, I used pre-made coleslaw mix from the produce section of my grocery store.

These Honey Lime Chicken Sandwiches have SO much flavor and are a great summer Crockpot meal!

Ingredients

  • ½ cup honey

  • ¼ cup chicken stock (or water)

  • 2 limes (juiced)

  • 6 cloves garlic (minced)

  • ½ teaspoon salt

  • 2 lbs boneless skinless chicken breasts (roughly 4-5 chicken breasts)

    SLAW:

  • 1 cup shredded cabbage

  • ½ cup shredded zucchini

  • ½ cup shredded carrots

  • ¼ cup torn cilantro leaves

    VINAIGRETTE:

  • 1 tablespoon white wine vinegar

  • 1 tablespoon olive oil

  • 1 teaspoon honey

  • ¼ teaspoon dijon

  • ½ teaspoon sesame oil
