Instant Pot Pinto Beans

Pinto beans and cornbread is a whole meal in the south. These Instant Pot pintos are great because they have so much flavor and you don’t have to soak them overnight! Highly recommend!

This makes about 12 servings.

Notes: I totally forgot to use chili powder and it was just fine! I left out the coriander as well, just because I didn’t have any. We served this with fresh diced onion and chow chow on top! And of course we made Grandmom’s Cornbread, too!

Ingredients

  • 2 strips uncooked bacon

  • 1 small onion - diced

  • 4 cup low-sodium chicken broth

  • 1 1/2 cup water

  • 1 1/4 tsp garlic powder

  • 1 1/4 tsp kosher sea salt

  • 1 tsp chili powder

  • ½ tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp paprika

  • 1/4 tsp ground black pepper

  • 1/8 tsp cayenne pepper

  • 1 lb pinto beans - rinsed and picked through
