One Pot Italian Chicken and Orzo

If you want a restaurant quality dinner in about 30 minutes and made all in one pot, this is the recipe for you!

This makes about 6 servings.

Notes: I used yellow squash in place of zucchini.

This is a one pot meal the family will love!

Ingredients

  • 2 chicken breasts, chopped into bite size (approx.1 pound)

  • 1 Tbsp olive oil

  • 3 Tbsp pesto, divided

  • 1/2 onion, chopped

  • 1 cup sliced carrots

  • 1 cup zucchini, quartered

  • 1 red bell pepper, chopped

  • 1 cup uncooked orzo

  • 2 garlic cloves, minced

  • 1 14.5 oz. can crushed tomatoes

  • 2 cups low sodium chicken broth

  • 1 tsp chicken bouillon, optional*

  • 1/2 tsp dried oregano

  • 1/4 tsp salt *

  • 1/4 tsp pepper

  • 1/4 tsp red pepper flakes

  • 1/2 cup freshly grated Parmesan cheese
