Mandy’s Sausage and Potato Casserole

Let’s turn potatoes au gratin into a main dish, shall we? This dinner is so yummy!

This makes about 6-8 servings.

NOTES Use the seasonings you’d prefer!

Ingredients

  • 1 lb sausage

  • 1 onion, diced

  • 3 cups thinly sliced potatoes (peeled)

  • 1 can cream of mushroom soup

  • 1 (4 oz) can diced green chilis

  • 3/4 cup milk

  • 2 cups shredded cheddar cheese

  • salt and pepper to taste

  • 1 tsp garlic powder

  • 1/2 tsp chipotle chili powder

Here’s how to make it

  • Preheat oven to 350 degrees F.

  • In a large skillet, cook and crumble sausage along with diced onions. Once browned, pour onto a paper towel lined plate to drain.

  • Meanwhile, mix cream of mushroom soup, diced chilis, milk, and seasonings in a bowl and set aside.

  • In a greased 2 qt baking dish, layer 1/2 of the potatoes, followed by 1/2 of the sausage, 1/2 of the cheese and 1/2 of the soup mixture.

  • Repeat the layer one more time (excluding the cheese the second time - you’ll save that last cup of cheese for the top at the end of the baking time)

  • Cover tightly with aluminum foil and bake at 350 for 1 hour.

  • At the end of the hour, remove foil and top with remaining cheese. Place back in the oven for 3-4 minutes to melt.

  • Serve and enjoy!!
