TOUCHDOWN TATERS

I saw a version of these on YouTube shorts and I decided to put my own little twist on them. They turned out great and now I’m thinking of all the different ways I could use the hashbrown rectangles!

This makes about 4 servings. But feel free to make them for a crowd!

NOTES Using the air fryer will likely make these crispier and help them be a sturdier base for the toppings. Next time I make them, I’m using the air fryer!

These hashbrowns topped with pulled pork, cheese and other toppings stole our hearts!

Ingredients

  • 1 bag frozen hashbrown rectangles (I only used 6 of them from the bag)

  • 1.5 cups shredded cheddar cheese

  • 1 refrigerated package of Jack Daniel’s Pulled Pork (or make your own pulled pork)

  • 2 Tbsp of your favorite BBQ sauce (more if your pulled pork isn’t already saucy)

  • 1-2 tsp BBQ rub seasoning

  • 2 green onions, sliced

  • 1/4 red onion, finely diced

  • 3 Tbsp bacon pieces

Here’s how to make it

  • Preheat your oven to 400 F. Place hashbrowns on a baking sheet and bake for 10 minutes.

  • Remove from the oven and top with a light layer of cheese, top that with pulled pork and finish with the remaining cheese.

  • Place back in the oven for another 10 minutes.

  • Once removed, top with your choice of toppings. (Mine are all above). Serve and enjoy!
