Turkey and Herb Rice Skillet

This dinner was created using all the things I had on hand and needed to use before they went bad. And guess what?? It was DELICIOUS!

This makes about 6 servings.

Notes: Use whatever veggies you have on hand!

You don’t really need a recipe to make a great dinner for your family!

Ingredients

  • 1 box Herb and Butter Rice A Roni

  • 1 Tbsp olive oil

  • 2 Tbsp butter

  • 2.5 cups water

  • 1 lb ground turkey

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 small squash, sliced

  • 1 broccoli crown, chopped into bite-sized pieces

  • 2-3 Tbsp pesto

  • handful of parmesan cheese

  • salt and pepper to taste

Here’s how to make it

  • Heat a large skillet to medium high and add oil.

  • Brown ground turkey along with onion and bell pepper. Salt and pepper as desired.

  • After turkey is done browning, remove all to a plate lined with a paper towel.

  • Add to the same skillet 2 Tbsp butter and dump rice (without spice packet) in. Stir around and cook until it’s slightly browned.

  • Add water and allow to come to a boil. Add squash and broccoli, turn temp to almost low and cover with lid. Allow to simmer for 15 minutes.

  • Now, add your turkey back in and the seasoning pack from the Rice A Roni box. Stir and let it cook for another 10 minutes.

  • At this point, I wanted to add pesto in. You don’t have to if you don’t like it.

  • Sprinkle with cheese and allow to melt.

  • Serve and enjoy!
