Alfredo Chicken Bacon Bake
A simple meal with simple ingredients that tastes absolutely delicious!
This makes about 6 servings.
NOTES I used 3 large chicken breasts. I also added about a cup of mozzarella. This makes so much sauce, it wouldn’t be bad to make a side of pasta to go with it!

Ingredients
4 slices bacon, chopped
1 red bell pepper, diced
6 boneless skinless chicken breasts
Salt and pepper to taste
1/4 cup prepared basil pesto
1 15 oz. jar Alfredo sauce
1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
Chopped fresh parsley (for garnish)
Here’s how to make it
Preheat oven to 350 degrees F.
In a large skillet, heated to med-high, cook chopped bacon until crispy. Remove bacon to a paper towel-lined plate, leaving behind the bacon grease in the skillet.
Add diced bell pepper to skillet and sauté for 3-4 minutes until just getting tender. Remove to a medium-sized bowl.
Season chicken with salt and pepper and add chicken to skillet and brown on each side for 3-4 minutes. You aren’t cooking these all the way through.
While these are browning add: pesto, alfredo, and chicken broth to the bowl with the red peppers. Mix well and set aside.
Once browned on both sides, remove chicken and put in a greased 9×13 baking dish.
Pour the alfredo mixture over top of the chicken. Cover the dish with foil and bake in a 350 degree oven for about 30 minutes.
Once the chicken is done, top with mozzarella cheese and put it back in the oven, uncovered for another couple of minutes to allow the cheese to melt.
Once melted, remove from the oven and top with bacon and parsley.
Serve with mashed potatoes or pasta!
