Alfredo Chicken Bacon Bake

A simple meal with simple ingredients that tastes absolutely delicious!

This makes about 6 servings.

NOTES I used 3 large chicken breasts. I also added about a cup of mozzarella. This makes so much sauce, it wouldn’t be bad to make a side of pasta to go with it!

This tastes like something you’d order at a restaurant!

Ingredients

  • 4 slices bacon, chopped

  • 1 red bell pepper, diced

  • 6 boneless skinless chicken breasts

  • Salt and pepper to taste

  • 1/4 cup prepared basil pesto

  • 1 15 oz. jar Alfredo sauce

  • 1/2 cup chicken broth

  • 1/2 cup shredded mozzarella cheese

  • Chopped fresh parsley (for garnish)

Here’s how to make it

  • Preheat oven to 350 degrees F.

  • In a large skillet, heated to med-high, cook chopped bacon until crispy. Remove bacon to a paper towel-lined plate, leaving behind the bacon grease in the skillet.

  • Add diced bell pepper to skillet and sauté for 3-4 minutes until just getting tender. Remove to a medium-sized bowl.

  • Season chicken with salt and pepper and add chicken to skillet and brown on each side for 3-4 minutes. You aren’t cooking these all the way through.

  • While these are browning add: pesto, alfredo, and chicken broth to the bowl with the red peppers. Mix well and set aside.

  • Once browned on both sides, remove chicken and put in a greased 9×13 baking dish.

  • Pour the alfredo mixture over top of the chicken. Cover the dish with foil and bake in a 350 degree oven for about 30 minutes.

  • Once the chicken is done, top with mozzarella cheese and put it back in the oven, uncovered for another couple of minutes to allow the cheese to melt.

  • Once melted, remove from the oven and top with bacon and parsley.

  • Serve with mashed potatoes or pasta!
