Chicken Sausage and Veggies

This one skillet meal is a great way to use up veggies from the fridge!!

This makes about 6 servings.

Notes: Feel free to use kielbasa instead of chicken sausage and, of course, use whatever veggies you have on hand!

One skillet, healthy, and delicious in under 30 minutes?! This chicken sausage and veggies skillet is perfect!

Ingredients

  • 1 lb chicken sausage, cut into slices

  • 1 lb baby yellow potatoes, cut into 1 inch chunks

  • 2-3 Tbsp olive oil

  • 2-3 Tbsp butter

  • seasonings to taste (I used Italian seasoning and Auntie Nono’s Everything)

  • chopped veggies (I used mini sweet peppers, green bell pepper, onion and zucchini)

  • 1 cup parmesan cheese (or any cheese you have on hand)

Here’s how to make it

  • Heat oil and 1 Tbsp butter in a large skillet on med-high.

  • Once hot, add potatoes and season to your liking. Stirring often, sauté these for about 12 minutes (until fork tender and golden brown). Remove from skillet and set aside.

  • To that same skillet add 1-2 Tbsp butter and chicken sausage. Sauté for 2-3 minutes, browning on both sides.

  • Add veggies (except potatoes) to the skillet and season to your liking. Stirring frequently, sauté these for 5-7 minutes total. (My skillet was really full, so I put the lid on to help steam and soften them quicker).

  • Now, add potatoes back in as well as the cheese. Stir and allow cheese to melt.

  • Serve and enjoy!
