Crockpot Broccoli Cheddar Soup

Panera, who?? This recipe is the best broccoli cheddar soup we’ve had!

This makes about 8 servings.

NOTES Broccoli stinks while it’s cooking, so if your kitchen doesn’t smell great, that’s why. 🤣

Better than any I’ve had at a restaurant!

Ingredients

  • 1/2 onion, diced

  • 1/4 cup butter

  • 1/4 cup flour

  • 2 cups half and half

  • 2 cups low sodium chicken broth

  • 1 head broccoli, cut into bite size pieces

  • 1/2 cup shredded carrots (about 1 carrot)

  • 2 cloves minced garlic

  • 10 oz Velveeta Cheese, cubed

  • 1/2 tsp each salt and pepper, or to taste

Here’s how to make it

  • In a small skillet, melt butter over medium heat. Add onion, sautéing until translucent (about 3-5 minutes), adding in garlic the last minute.

  • Add flour and toss onions and garlic to coat. Transfer to your slow cooker.

  • Pour chicken broth, and half and half over the onions and garlic. Whisk to combine, adding salt and pepper to taste.

  • Add broccoli, carrots, and cubed Velveeta. Stir and cover.

  • Cook on low for 4 hours, or high for 2 hours.

  • Stir well and test seasonings before serving.
