Crockpot Creamy Mashed Potatoes

Mashed potatoes can easily be done in the Crockpot without having to boil them on the stovetop. These are so fluffy and creamy.

This makes about 10 servings.

NOTES Make these as creamy as you’d like! This isn’t an exact measurement type recipe. There’s LOTS of room for tweaks.

No need to take up room on your stovetop for these delicious mashed potatoes.

Ingredients

  • 5 pounds potatoes, peeled and cut into small chunks

  • ¾ cup chicken broth

  • 1/2 - 1 tsp (or to taste) of onion powder, garlic powder, salt and pepper

  • 1/4 cup melted butter

  • 1/2 cup sour cream

  • 2-4 Tbsp chive and onion cream cheese

  • 1/4 - 2/3 cup milk (or half and half, or heavy cream)

Here’s how to make it

  • Add potatoes to the bottom of your Crockpot along with seasonings and chicken broth.

  • Cover and cook on high for 3 hours or low for 6 hours.

  • IMPORTANT: Stir the potatoes every hour so they don’t burn.

  • After they’ve finished cooking and are very tender, mash them or use a hand mixer to make smooth.

  • Add butter, sour cream, cream cheese and milk and mix again. Adjust any of these ingredients to your liking.

  • Test seasonings and adjust. Turn off the Crockpot and remove potatoes to another bowl so they don’t dry out from the leftover heat in the slow cooker.
