Crockpot Taco Hashbrown Casserole

I found this recipe online and tweaked it to our liking and, BOY, did we like it! This is a perfect cozy weather dish!

This makes about 6-8 servings.

NOTES I added a well-drained can of Rotel. I also added an onion to my ground beef as it cooked.

This comfort food Crockpot casserole will make the whole family happy!

Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 oz packet taco seasoning (or 3 Tbsp)

  • 10.5 oz cheddar cheese soup

  • 30 oz frozen shredded hashbrowns

  • 2 cups shredded taco style cheese divided

  • 1 can Rotel, (well-drained), optional
