Crockpot Tuscan Garlic Chicken

 
 

When Cheryl submitted this recipe, I had reservations because it used sun-dried tomatoes. But I’m SO glad I made the exception and tried it anyway. This Tuscan Garlic Chicken just became a favorite in our house!

This recipe makes about 4 servings.

Notes for this recipe - I put the sun-dried tomatoes in the blender to break them up. I don’t like the texture of them and this worked like a charm!

Ingredients

  • 6 – 8 skinless, bone-in chicken thighs

  • 1 tablespoon olive oil or butter

  • 6 cloves garlic, minced

  • 1 cup heavy cream

  • 1/3 cup chicken broth

  • 3/4 cup grated parmesan cheese

  • 1 tablespoon Italian seasoning

  • 1 teaspoon crushed red chili pepper flakes, optional

  • sea salt and fresh cracked black pepper

  • 1/2 cup sun-dried tomatoes (chopped)

  • 2 cups spinach (chopped, packed)
