Fiesta Chicken Thighs

 
 

If you are looking for a true set it and forget meal, this recipe is for you! Just 3 main ingredients make a great, filling meal your family will love!

This recipe makes about 3-4 servings.

Notes for this recipe - I seasoned my chicken with Trader Joe’s “Nothing but the Elote” seasoning as well as Adobo seasoning. I also used fire roasted tomatoes that I forgot to drain.

A truly simple Crockpot meal!

Ingredients

  • 4-6 boneless, skinless chicken thighs

  • 2 (15.1 oz) cans Bush’s Taco Fiesta Black Beans (in a mild chipotle sauce)

  • 1 (14.5) can diced tomatoes (drained)

Here’s how to make it

  • Season chicken however you prefer and place into the slow cooker.

  • Pour both cans of Bush’s beans and drained can of tomatoes over the chicken.

  • Cook on high for 1 hour, followed by 4 hours on low or until chicken is done.

  • Serve over rice or riced cauliflower.
