Greek Salmon Bowls

When our family went on vacation, I ordered a Salmon Bowl at one of our favorite restaurants on Hilton Head Island, SC. Main St. Pub and Cafe got it RIGHT and I had to recreate this when we got home. It has great Greek flavors and is so quick to get on the table.

This makes about 2-3 servings.

Notes: The restaurant also added spinach and artichoke hearts to the veggies, so those would be great to add in if you can!

Recreating this Greek Salmon Bowl was so much fun and our family loved the flavors!

Ingredients

  • salmon fillets (skin on, or off)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 onion, sliced

  • 1 Tbsp minced garlic

  • 2 Tbsp butter

  • kalamata olives

  • feta cheese

  • 1/4-1/3 cup Greek Vinaigrette

  • 1 cup rice

  • Auntie Nono’s Seafood Seasoning

Here’s how to make it

  • Cook rice and set aside.

  • Prepare salmon however you’d like. I steamed ours, but you could grill or bake.

  • In a large skillet over med-high heat, melt butter.

  • Add onions and peppers and sauté for about 4-5 minutes.

  • Add garlic and cook for another minute.

  • Reduce heat to med-low and pour in Greek dressing. I also added some feta in at this point. Simmer for 5 minutes.

  • Serve everything together in a bowl. Rice, veggies and salmon topped with kalamata olives and feta.
