Mexican Street Corn Chicken

This street corn chicken is so creamy and not to mention sweet and savory at the same time! It took 5 minutes to prepare before putting it in the oven. Wonderful weeknight meal!

This makes about 4 servings.

Notes: Feel free to leave the cayenne pepper out of this to keep the spice level down. Also, I used a 16 oz bag of frozen corn and it turned out great!

This dish is like having an entrée and side dish combined into one. It’s so creamy and tasty!

Ingredients

  • 2 lbs boneless, skinless chicken breast (4-6 thin chicken breasts)

  • 3 cups sweet corn (2 cans, drained)

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1/2 Tbsp lime juice

  • 1½ tsp chili powder

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/4 tsp cayenne pepper (optional)

    TOPPING

  • 1/4 cup queso fresco, crumbled

  • 1/4 cup cilantro, chopped
