Italian Stuffed Peppers
Often times I make stuffed peppers with a Tex-Mex flair, but these Italian stuffed peppers were delicious and were the perfect thing to make for just two people.
This makes about 2 servings but could easily be made for a larger number of people.
NOTES Italian sausage would be great for this recipe, too!

These take about 20 minutes to make! Super quick and easy home-cooked meal!
Ingredients
2 large bell peppers (doesn’t matter what color
1/2 lb ground beef
1 cup cooked rice (Use 90 second “pouch” rice to make it super quick)
1/2 cup marinara sauce or tomato sauce (Plus a little extra for topping)
1/2 Small Onion, diced
1-2 cloves garlic, minced
1 tsp Italian seasoning
1/2 cup shredded Italian cheese blend (or mozzarella)
Salt & pepper to taste
Here’s how to make it
Preheat oven to 400 F.
Slice the tops off the bell peppers and remove seeds. Place them in a microwave-safe bowl with about a 1/2 inch of water in the bottom of the bowl.
Microwave on high for 3-4 minutes to soften the peppers. (This way they don’t have to bake as long.)
Meanwhile, brown ground beef along with onions and garlic. Drain, if needed.
Microwave pouch of rice and then add to the ground beef. Also add in marinara sauce. Mix and allow to heat through on low heat for 3-5 minutes.
Place peppers in a casserole dish and stuff full of ground beef mixture. Top with a little extra marinara sauce. Finish with cheese.
Bake at 400 for 10-15 minutes. Serve and enjoy!
