One-Pot Ground Beef and Cheesy Potatoes

We’re taking it back to the basics with this one. I almost always have all these ingredients on hand and sometime you just want a rustic “meat and potatoes” kind of meal.

This makes about 4 servings.

NOTES I chose yellow potatoes because I wouldn’t have to peel them, but use what you have!

One of the easiest, yet super tasty meals you can make!

Ingredients

  • 1 lb lean ground beef

  • 2 tsp olive oil

  • 1.5 lbs yellow potatoes, skin on and sliced in 1/4 inch rounds

  • 1 small onion, diced

  • 1 green bell pepper, diced (optional)

  • 1/2 cup low-sodium beef broth (just to steam the potatoes)

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp salt and 1/4 tsp black pepper

  • 1 and 1/2 cups shredded cheddar cheese

  • sliced green onions for garnish

Here’s how to make it

  • Heat large skillet to med-high and add oil. Lay potato rounds in the pan in a single layer. (It’s okay if they overlap a bit).

  • Sear them on that side for 3-4 minutes to get a bit of a golden color. Once seared, push to one side of the pan.

  • Add ground beef, bell pepper and onion. Break up the meat and add all your seasonings to it while it’s cooking.

  • Once ground beef is cooked, use the paper towel method to remove excess grease from the skillet.

  • Pour in beef broth and put a lid on the skillet and allow to simmer for 8-10 minutes. (You are just cooking the potatoes until fork tender).

  • Remove the lid. If there’s still a good bit of liquid, let it bubble off for a couple of minutes.

  • Turn off the heat and cover it all with the cheese. Pop the lid back on just to let it steam/melt the cheese for about a minute.

  • Top with green onions, serve and enjoy!
