Mexican Mush

 
 

I love a good family recipe that’s loved by different generations! Mexican Mush was created by Tabitha’s mom and it’s still going strong and everyone loves it!

This recipe makes about 6 servings.

Notes for this recipe - I added onions to my ground beef as it cooked just because we love onions.

Ingredients

  • 1 lb ground chuck

  • 2-3 cans pinto beans, drained and rinsed

  • 1 can Rotel

  • 1 12oz jar taco sauce

  • 2-3 cups shredded cheddar cheese

  • 1 large bag of Doritos

  • 1 head of lettuce, shredded

  • 1 large tomato, diced

  • Zesty Italian dressing

Here’s how to make it

  • Heat a large skillet to med-high and brown ground meat. Drain if needed.

  • Add pintos, Rotel, taco sauce, and most of the shredded cheese. Stir to combine and bring to a simmer. Then lower the heat until cheese is completely melted (about 5 minutes).

  • Make a salad out of the lettuce and tomato

  • Crush a handful of Doritos in the center of the plate. Add Mexican Mush over the Doritos. Then add the salad and any other toppings your family loves.

  • Finally, top it off with Zesty Italian Dressing and enjoy!

  • Note from Tabitha: You can also use this as a dip!
